New news on my kimchi quest.

Apparently probiotic foods can have a positive effect on people with ESRD.

A few weeks ago I asked my dietitian about kimchi, which she has never had. She told me she wasn't comfortable with me eating it, even though it has less potassium than other foods that I currently measure and eat. As a result, I decided to talk to my nephrologist (who is ultimately the person I clear "big" questions with).

SHE SAID YES TO MY EATING KIMCHI. She said to try it for a month and see how my bloodwork turns out. Glad I asked her instead of just going with what the dietitian said (as she has wasn't familiar with kimchi). So...asking for a starter kit for Christmas. If kimchi doesn't work with my bloodwork, I can still make pickles or sauerkraut.

On top of that, my dietitian wants to put me on a prescription phosphorus binder because my calcium was .1 high a month and a half ago (last time was 2 years ago). I was taking TUMS as a phosphorus binder, but it has high calcium in it. My doctor told me to stop taking ANYTHING while I get approved for financial aid to get the prescription phosphorus binder.

The result? I HAD PERFECT POTASSIUM AND PHOSPHORUS LEVELS THIS MONTH WITHOUT ANY MEDICINE. And the levels weren't even on the "high" end of good...they were WELL within limits.

What do I take away from this? Measuring food carefully and logging here on FS really helps. My bloodwork was already good before FS, but I've found I can incorporate some "no-no" ESRD foods because I carefully measure...like almonds, peanut butter, baked potato, and pasta with tomato sauce. All foods I've had while on FS, carefully portioned and measured. Obviously not on the same day!

I'll still go on the prescription if I'm approved, but it's nice to know that being careful helps.

First day of PT...woo hoo! So excited to have stretches to do at home.

The visit was telling. Apparently I have been overcompensating for my right hip by using my left leg for quite some time. There is some atrophy in my right leg. Got home and decided to measure the biggest part of my thigh and calf for both legs:

Left calf: 13 inches
Right calf: 12 inches
Left thigh: 20 3/4 inches
Right thigh: 19 inches

I have a lot of work to do!!

The pic is Stuffed Bell Peppers...my roommate was nostalgic for his momma's and grandmomma's cooking. I dug through some of MY family's recipes and adapted them.

white rice (plan to try quinoa in the future)

I ate ONE and was stuffed. Will have to try with quinoa!
