Had strawberries for breakfast and lunch yesterday & today, 2 lbs. each day, and am in hog heaven. You know when they perfume your whole kitchen that they're going to taste like candy. 🤗💖🍓🍓🍓
Tried out a new springtime recipe last night that I found on Williams & Sonoma's website for an asparagus salad. Pickle a diced red onion in red wine vinegar, blanch asparagus and chop into bite-sized pieces, add to a bowl of raw sugar snap peas and torn up mint. Add the marinated onion. Toss the whole salad with a dressing made of red wine vinegar, olive oil, minced garlic, salt & pepper. Took less than 15 minutes and tasted divine.
Tonight I'm roasting potatoes, leeks and Brussel sprouts with rosemary and garlic cloves, tossed with olive oil and salt & pepper. Having with a bowl of cherry tomatoes.
Fine-tuning the July goal, so instead of just reducing total cholesterol from 216 down to 190, am also including reducing my LDL from 130 down to 70. That's a bit of a reach for me, and I'd be happy if I can just get the Total below 200 and the LDL to under 100.

Fruit Cleanse over, 2nd Stage begins 💖💥
Had a crappy night's sleep, gave up tossing & turning at 3:00. Finished a bowl of red grapes, read Vanity Fair, then started the coffee at 4:30 when it was clear there would be no more zzzz's. Brunch was 3 bananas. Mid-day lunch will be 3 more.
Don't know how productive I'll be today as far as exercise goes, since I'm currently moving through that no-sleep-overcaffeinated-zombie state.
Dinner will be a big bowl of raw sugar snap peas & cherry tomatoes, followed by 2 cups of cannellini beans (cooked from dry), made with diced garlic, rosemary, lemon zest, drizzle of olive oil, and ground pepper & sea salt.
Trying to keep levels of saturated fat to under 6 grams/day and processed foods/condiments to under 15%. No restrictions on sodium (I've had Hypotension since my 20's).
Goal: Decrease Total Cholesterol from 216 down to 190 by July 2022
Method: Increase daily exercise, remove saturated fat, 85% raw vegan

Grape Day, All Day 🍇🍇🍇
Enjoying red grapes today, a welcome change from the heavier bananas and mangoes this week.
Have started a new habit of doing some exercises before each meal this week: 150 crunches, 30 arm curls with resistance band, and 50 high marches with elbow to knee. Sounds like nothing, it's just 3x/day, but I feel less guilty about sitting down to food. Of course, this can also lead to ridiculous obsessiveness so I'm keeping an eye on how strict I am with myself.
