Whole Wheat Cranberry Nut Muffins

My favorite on the run treat, a whole wheat muffin made with walnuts and cranberries.

Ingredients

Directions

  1. Heat oven to 400 °F (200 °C). Grease bottoms only of 12 muffin cups or line with baking cups.
  2. In a medium bowl, combine flours, sugar, baking powder and salt; mix well.
  3. In a small bowl, combine milk, applesauce and egg; blend well.
  4. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)
  5. Fill cups 2/3 full. Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean.
  6. Cool for 1 minute before removing from pan. Serve warm.
