Spinach & Lentil Soup
Homemade high fiber, super healthy lentil and spinach soup.
Ingredients
Directions
- Saute onion, garlic, celery, and carrots in the olive oil.
- Add chili powder, paprika, and cumin seeds and cook for a minute, stirring constantly.
- Add lentils, water and stock and dash of salt and pepper.
- Bring to a boil, cover, reduce heat and simmer for an hour.
- Add the spinach and tomatoes and cook for a few minutes.
