It looks like and tastes like potato soup, but it's cauliflower.
Ingredients
Directions
- In a large dutch oven, bring the cauliflower, red onion and broth to a boil.
- Cover and simmer until the cauliflower is very tender, about 20-25 minutes.
- Use a stick blender to puree the soup until completely smooth and thick. If you do not have a stick blender, just put it in your regular blender and blend. Then return it to the dutch oven.
- Add the butter and half & half, mix well. Add salt & pepper to taste.
- Stir in the shredded cheese and heat very slowly until melted.
- Garnish with bacon, parsley and sour cream.

Excellent soup. It does taste like potato.instead of putting the bacon on top, I cooked bacon and onion together and cooked it with cauliflour.Delish

Not sure why David thinks this is too many carbs? But, they can still be lowered by replacing the half and half with heavy cream. This is for six servings, not one or two. Also, texture is better if ONLY florets are used- not stem pieces. And, I would add a t of minced garlic, and more cheese. Going to make this over the weekend!
