This may seem like a simple concept, but I just now see how versatile lettuce leaves can be. I have made BLT's before, but a couple strips of bacon and a slice of tomato in lettuce...no big deal.
But, tonight we had tacos in lettuce shells. I wasn't sure how they would work, but....lllooovvveee. A little messy,yes. Alotta delicious, yes.
This has opened up a whole new world of food to me. Bacon, egg and cheese wraps in the am, tuna wraps for lunch. I get crunch, low carb and low calorie. Win. win. win.

I know that I am not supposed to watch my calories very closely on Atkins. But, I can't help it. I had a moderate breakfast and lunch so far today with no snacking and I am already over 900 calories. I will be hungry before dinner, so I have to have something for snack later (probably pepperoni chips). My fat/protein/carb ratio seems pretty good right now.
I can easily consume 2200+ calories/day and it's really beginning to stress me out trying to maintain high fat at a reasonable calorie intake.
