Words can not describe how happy I am to be off for 7 days. I drove to work last night because my plan was to drive to the gym, do my work out and cardio there and drive home. Success! I had a great work out but I am a tired gal.

I am making dinner today for my folks and they wanted chicken and dumplings. So, I am making these from scratch. The dumplings are made with flour, mixed with broth to form a ball, rolled very thin (1/8) of a inch and then boiled in broth water. My question to all you FS experts, What do you think the calorie intake of these things are? I would like to have a portion with my chicken (which is boiled to make the broth) but I have the need to know how to count it. When I search it, the calorie range is vast. Any clue, suggestions, hints as to what or how to count it?

Measure your ingredients calorie content, flour/amount of broth and then divide it by the number of dumplings you end up with. example 300 calories worth of flour, plus 100 calories of broth. Total - 400 calories divided by 20 dumplings would be about twenty calories a dumpling. It's a lot more work to calculate yourself, but something I've done many times. I hope this makes sense lol and helps!

I haven't made real dumplings in so long I wouldn't know; about 20 years ago someone suggested using flour tortillas and I have used those ever since. I just lightly dampen them with a paper towel then a quick coating of flour - the broth is thick and they aren't 'heavy' like when I would try to make them from scratch.

I like Yolanda's explanation. I have been using the cookbook section of this site to input my own recipes. I keep them private and don't share, because it takes forever for one to be approved!!! Any way, I have to enter in the portions used and estimate the servings made, and that is how I do it. On the side of the page with the edit of the recipe, is a nutritional guide that gives you the calorie content of what you are making per portion. Remember the portion size is what you estimate in the recipe. But I do like yolanda's idea better!!

Hi hon. I would agree with Yolanda. Add up the total calories of the flour, egg, broth, etc. make the dumplings as uniform in size as possible. Divide the number of dumplings into the total calories to get a per serving calorie. If you are making these like I think mom does, the broth will thicken from the dumplings so I think some gravy/sauce would already be calculated into your serving. Enjoy and enjoy your time off. Have another romantic outing with hubby - that will burn calories. It is horrible in MI today. Heavy rains and wind gusts up to 60 mph. I don't think we will get many goblins tonight.
