This recipe produced sushi for me. It takes more than double the recommended cook time to make the fish flaky. My seafood chef says 425F for 20-25 minutes is a good place to start. Fish was not frozen and the oven is very good at keeping temperature.

Love Snapper, it's a clean, tasty fish! This recipe just adds a tad of taste, yet allows the flavor of the Snapper to still dominate.
