Chicken Ratatouille
Served over rice, this delicious dish is loaded with vegetables and skinless chicken breasts.
Ingredients
Directions
- Heat oil in large nonstick skillet. Add chicken and sauté for about 3 minutes or until lightly browned.
- Add zucchini, eggplant, onion, green pepper, and mushrooms. Cook for about 15 minutes, stirring occasionally.
- Add tomatoes, garlic, basil, parsley, and pepper. Stir and continue to cook for about 5 minutes or until chicken is tender.

I made this over the weekend, and the family loved it. Definetly will be going after this recipe again. I think the only thing I added was a little balsamic vinagar and maybe a tsp of rosemary.

I made this with only 2 chicken breasts instead of 4 and served it to 3 people. It was wonderful! I did not have a problem with preparation or cooking time. You do need to stand next to the oven for at least 20 minutes.

I thought this was a fantastic recipe. A little time consuming for preparation but very good. I left out the parsley and added a bit more basil. The only thing is this - the portion sizes are HUGE!!! It was a very large portion and I just had it by itself; I can't imagine adding rice or pasta to it.

Points are high for a weight watcher member. Chicken appears to get hard and not enjoyable. I like the vegetables and the taste was acceptable.
