Crunchy twice baked banana cookies.
Ingredients
Directions
- Mix all ingredients except chocolate chips (add flour as needed).
- Roll into 2 8" logs. Bake for 23 minutes in preheated oven at 175 °C. Remove from oven and allow to cool for 10 minutes. Lower oven temperature to 105 °C.
- Cut into 1/2" slices, lay out flat on cookie sheet, bake for 15 minutes. Flip cookies and bake for an additional 15 minutes. Cool on wire rack. Biscotti will harden as it cools.
- After cooled melt chocolate chips and then dunk cookies to have half covered. Place on parchment covered cookie sheet and place in the fridge to cool until chocolate sets.
