Noedels met Broccoli en Cashewnoten

- Cashewnoten in droge koekenpan al omscheppend goudbruin roosteren. Champignons schoonmaken. Rode peper halveren, zaadlijst verwijderen en peper in reepjes snijden. Broccoli schoonmaken en in kleine roosjes verdelen.
- Broccoli en noedels in grote pan met kokend water in 4 min. beetgaar koken. Afgieten. Intussen wokolie in koekenpan verhitten en champignons met rode peper ca. 3 min. roerbakken. Munt fijnsnijden. Noedels, broccoli, champignons en sojasaus mengen en over 4 kommen verdelen. Bestrooien met cashewnoten en munt.
- In plaats van Fairtrade noedels kunt u ook gewone noedels (zak 250 g) gebruiken. Bereid de noedels volgens de aanwijzingen op de verpakking.
