Crockpot Breakfast
Be prepared to make this yummy dish the night before.
Ingredients
Directions
- Spray crockpot well with cooking oil.
- Divide potatoes, sausage, vegetables and cheese so you can create several layers of each in the crock pot.
- Start with the hash browns, then sausage, onions, peppers and last cheese. Repeat until you have several layers.
- Beat eggs, soy milk, salt and pepper. Pour over layers in the crockpot, cover and turn on low heat.
- Cook for 10-12 hours overnight.

Great meal. I tried it with griller meal starter crumbles inStead of the sausage. I add 5 carb to it for the Grillers.

Actually if you go to the counter and break this into the serving size then the calorie count is correct at 226. I did this and used the brands that I like and one it was done put it into 12 servings and each serving of mine equaled 271, but I used regular milk instead of soy milk. Only thing is the time cooking might be a little off I will do 6 hours next time.

I tested this recipe tonight. Thinking that since I leave the house by 7:30a, I would need to start it by 9p. I set my Crock-Pot on low for 10 hrs, and the eggs were fully cooked in less than 2 hrs. The directions may be off. I know that my Crock-Pot heats pretty well, but I don't think it overheats that much.

I live alone. This would make enough breakfast to last me a whole year :-) I agree with meisha, this recipe has to be more than 226 calories will all that fat; cheese, sausage, eggs AND potatoes??? Yup, definately high-fat! I'm sure it tastes delicious, but it's too high fat for me. As a diet food it just doesn't work, though.

I find it difficult to believe that a realistic serving of something containing sausage and cheese, never mind potatoes, could be only 226 calories. Not trying to be mean, just realistic :)

You can definatley use egg beater with this.. I did and it turned out great.
