Chicken crusted with a crunchy corn flake and parmesan coating.
Ingredients
Directions
- Pre-heat oven to 400°F (200°C). Prepare your baking sheet with a sheet of non-stick tin-foil or spray with cooking spray.
- In a shallow dish (one that will allow you to coat the chicken breasts) combine Corn Flake crumbs, parmesan cheese, herbs and spices.
- In a separate bowl, whisk together dijon mustard, water and eggs.
- Coat each chicken breast in egg/mustard mixture, then roll in the crumb mixture; place on the baking sheet.
- Bake in the oven for 20 minutes, or until chicken is golden brown and fully cooked throughout.

Yummy recipe! May I suggest crumbling a bran cereal rather than the corn flakes to add more fiber to this meal? I make homemade chicken nuggets for my kids and roll them in crushed bran flakes...much better for them :)

It's got the cereal, so that add's carbs. I think it would be OK infrequently.
