Sauteed Collard Greens with Turkey Bacon
Collard greens make for a delicious side dish.
Ingredients
Directions
- Slice greens, and wash thoroughly.
- Put greens in large bowl in water and microwave for 5-6 minutes.
- In the meantime, chop onion, bell pepper and turkey bacon. Sauté in olive oil until done.
- Remove greens from microwave oven and drain thoroughly. Pour greens into onion, bell pepper and turkey bacon mixture. Sauté for several minutes.
- Add water, bouillon cubes, and season with pepper flakes and sugar (as desired).
- Simmer on low for 20-30 minutes, until desired tenderness.

Reviews
I use garlic instead of onion. Have not tried it with bell pepper. Stock instead of bouillon can be more flavorful as well as healthier (fewer chemicals in the food). Same recipe works with kale and other greens, but watch the time -- kale cooks much faster; about 10 to 15min?
