Breakfast Quiche Muffins
Breakfast quiche with veggies and Canadian bacon that are great to have on hand for a quick breakfast.
Ingredients
Directions
- Spray large muffin tin with baking spray like Pam.
- Put 1/4 of the bread in each of the four cups.
- Divide the vegetables, cheese and Canadian bacon between cups.
- Pour eggs over the cup evenly until cups are full.
- Bake for 40 minutes at 350 °F (175 °C).
- These can be frozen and reheated. To reheat, microwave on 50% power for 45 seconds.

Reviews
This is not low-carb as printed (the bread, the low-fat cheese instead of full-fat). One could substitute real eggs, regular (full-fat) cheese, and a low-carb MIM (muffin-in-a-minute using carb-free flours--many recipes for these) in place of the bread. The recipe itself looks delicious, but would only be an Atkins induction or OWL recipe with these changes. :)

Thought was pretty good, but would be better with spinach and turkey bacon. Also I would suggest adding a little of egg beaters to bottom on muffin pan then add bread and let sit a while or prepare and put in refrigerator night before cooking.
