Directions
- Cut up the chicken and stir-fry until no longer pink; set aside.
- Finely chop the green onions (including green stems) and set aside.
- Scramble the eggs in a small skillet and set aside.
- Bring the chicken broth to a boil in a large skillet.
- Add the soy sauce, garlic and rice.
- Stir, cover and reduce heat. Simmer for 20 minutes.
- Quickly add the chicken, peas and carrots, and egg to the rice.
- Cover for another 10 minutes or until the rice is cooked and soft.
