Anticipating next weeks food menu where I will add back in some of lectin foods I have not had the last 3 weeks. Entering 4th and final week of Lectin Free 30-day Challenge. Will prep food for the week this weekend, and am excited to try even more new recipes, like "Lentil Chili" which will have tomatoes & 3 kinds of peppers, cooked in my Insta-Pot to pressure cook the lectins out of them.
