We're rooting for you.A very satisfying meal is a rotisserie chicken breast halved, some capers or sun dried tomatoes, some white wine, and chicken broth. Simmer to reduce the stock , add the chicken til warmed thru, thicken the sauce with a little cornstarch. You have Delicious Chicken Picatta without any butter. And it is really good--serve with roasted asparagus or frozen broccoli or mixed stir fry vegetables. Make really GREAT flavored stock by deboning the rotisserie chicken while still warm, throw bones and skin in a pot, you can add onion and celery chunks if you want and simmer for a couple hours. Makes terrific soup base too. Freeze til you need it.
