Going without the foods on my "sensitive to" list has been interesting. Some things have been harder to give up, like almonds, and others have been easier. I'm finding new and interesting recipes. I did not know mayonnaise has lemon and mustard in it. Both things I cannot have. For the first time I made my own mayo. Had I known how easy it is I would have been making my own for a long time. So much better without all the additives. I can flavor it up any way I want it. I also had to make my own salad dressing. I do this quite often anyway, but I can't use parsley, paprika, lemon, mustard, etc. It took a while to find a good ranch dressing mix that didn't require these items. I tweaked it some and think the dressing turned out not too bad. I won't say it is as good but if you can't have the real thing this will do! I am using sunflower seeds more, both as seeds and sunflower butter. Today I made sunflower crackers. Not as good as my almond crackers but still quite good. It's been fun tracking down new ideas. I am in no danger of starving anyway!

Got results back on my food sensitivity test this week. It could have been worse but almonds, peanuts, lemon, parsley, paprika and cottage are going to be hard. I did not know how many things have lemon in them. Almonds are a mainstay for my low carb WOE. Going to try tiger nut flour but it is a bit higher in carbs. I've never had walleye pike but now that it's on my list of "can't haves" I want it! I just have to give these items up for 30 days then I can slowly add back and look for reactions. Sorry cashews...we must part ways for a year.

I spent the week trying to get back on track. I cooked most of my meals, layed in some of the basics, and even found time for a little exercise. My pain is back to manageable and I even have a little more energy. Now if the weather would just cooperate and cool down I'd be Happy!
I was able to get out for a walk at Powell Butte. I love walking there. I even tried a new trail. I need to commit to going there much more often.

Having a hard time getting back to a solid low carb way of eating. My summer break from school has started so there is no excuse not to pull out the tried and true recipes. This morning I tried eggs in a jar. They were ok but a little over done.
