Day 5 down! I did good.. I think.. I LOVE LOVE LOVE the mock peanut butter pie!! Graciepoo... THANK YOU!

B: 2 eggs, small mug of coffee w/milk, sugar free vanilla creamer,and xylitol

S: small glass of V8

L: Leftover Roast w/ Mashed Cauliflower, drippings & onions.

S: I licked the spoon when I made the Mock peanut butter pie (Made w/ natural PB crunchy, lite cream cheese and lite coolwhip).. About 2 spoons worth of ingredients.

D: about 6 slices of eggplant w/ parm cheese, spray oil, & italian seasoning.. Compliments of a recipe here! 4 pieces of celery (about 3" each) 2 w/PB, 2 w/Hummus I had 3 spoonfuls of the mock peanut butter pie for dessert.

E: About 10 mins.. I am still sore from last night.

You are very welcome! That PB Pie got me through the first several weeks I was on this diet. If i was really craving a sweet, I would just get a spoon and eat a bite. I like to freeze it and then I don't eat as much. Just a little spoonful and eat it slowly. Mmmm good!

the peanut butter is good...but watch the amounts...i think in phase 1 only 2 servings of nuts are to be eaten...the rest of the day lookes good...
