Been super busy but still trying to keep within my eating plan. I can see myself wanting to migrate back to old ways when I don't have time to cook and when I am on the run. It is much easier to grab a low carb tortilla than a salad. But I don't want to get comfortable with the old style of eating (even with low carb products). Bottom line...MUST cook and have healthy foods available. It just has to be part of my week, busy or not!

Hey F8- it is so true we sometimes do try to substitute back in (even w/ a low carb option) the very things we tried to get rid of... what do you put in your tortilla? Could you substitue a large Romaine Lettuce Leaf and make a rollup instead? Or try to find at least one night, or afternoon on the weekend, when you could make two or three things, like a pork roast in a crock pot, a meatloaf, etc.. and then you'd have leftovers at the ready on the nights you are crazy busy! ??? Just thinking out loud?

Thanks...yes, I like to pre-prepare meals; it really helps and I definitely see that I am more successful on those weeks that I do cook ahead. In fact, today is cooking day! Thanks for the good ideas and for the encouragement!
