I thought I had turned the corner yesterday evening but woke up to find it was just a kink in the road. Think Lucy was using the back of my throat as a scratching post!

Everything gets counted, but when it is medicinal it is negligible. A bad throat has its bonus though, you don;t really feel like eating that much. :)

Hope you'll get better soon. Try to eat light but nutritious food when you're not well. I'd suggest blasting it with a very high dose (3-4 times higher than RDI) of vitamin C in the next 24h.
Also, I'd suggest staying on track with noting everything you eat/drink and perhaps making a note in your journal that that was during illness. That way you'll know how it affected you. You'd know more about your body :)
