WHAT are they wrapped in?

They are wrapped in rice paper spring roll wrappers. It comes hard, looks a bit like plastic, and you soften them in water. Recipe wise, I use mint, lettuce, beansprouts, peanuts, some sweet chilli sauce and sriracha, cucumber, spring onions and in this one leftover chicken but the beauty is you can put what you want in and everyone makes their own. My kids add noodles.
