I made my first spaghetti squash last night. I approve! While extremely bland (every source I read wasn't kidding when they said it had no flavor itself), it makes for a great substitute for pasta. I learned this morning it makes a fine substitute for hashbrowns, too, if you put them in your eggs (omelet, scramble, etc.). If you had them on the side with ketchup they probably wouldn't be quite the same.
Probably the best thing about it is that I have spaghetti squash coming out of my ears! This is not a veggie to buy if you're single. I have two large tupperware containers full of the stuff! I seriously think I'll have to eat spaghetti squash for at least seven consecutive meals in order to go through it all! I'm trying to think of ways to make it different so I'm not eating it like spaghetti the whole time (that's how I decided to try it in my eggs this morning). I think later I'm gonna make a "mac" and cheese with it, and then do "spaghetti" again for dinner. I think I'm going to put mushroom gravy on it tomorrow, something I thought of at one of the recipe sites where it said to "add gravy or sauce". Sounds good!
