Tried making some low carb pancakes... they were ok I need to tweek the recipe a bit. I've been doing my own diet more or less... leaning toward Atkins but more choices in carbs and just keeping calories down.

I've read some blogs where protein powder was used to make pancakes. Never tried it. hmmm.. ya got me thinking though. Maybe a low carb version of crepes with shrimp? Sounding good for some reason but then I do love seafood. So happy to see you back, Myree!!

I make my pancakes with 1/2 cup protein powder (plain or vanilla) and 1/2 cup of flaxmeal. I also use the same mix in the waffle iron (I bought one for $15 or so) and freeze them. Then pop them in the toaster just like you would a regular frozen waffle.
