Happy May! It's a new month, and this month I am vowing to myself to be diligent with on counting my proportions and my calories. I've purchased a digital scale for my kitchen, and it should arrive tomorrow!

Has anyone tried to make cauliflower rice? I love cauliflower (found this out recently) and am excited to try it. Want to try it as a substitute for a shrimp fried rice recipe that I have. Any tips on making it, or should I just go for it!

Yes! I make it in my food processor on pulse, or I just buy the fresh from the store when I don't have time. Go for it! You'll find the right consistency as you go. Just squeeze out the excess liquids in a dish towel when your done.

Thanks! I don't have a food processer but I bought a Grater that has 4 sides of different sized holes so I guess I'll do a little bit at a time until I find the right length/size I like. Awesome!

Awesome! A digital scale is an indispensable tool in a weight loss journey! I’ve never made my own cauliflower rice but there are so many diced cauliflower options these days- I find it in the fresh produce section as well as frozen section at my local grocery store. I love cauliflower crust pizzas and cauliflower mashed “potatoes,” too, both excellent ways to get more vegetables without the extra carbs or calories. Good luck to you!

You can buy cauliflower rice at the grocery store in the frozen veggies section.

you can just buy it at the store now. easy peasy. the world has changed. i remember when I bought a food processor bc I needed to make cauliflower rice.

I love cauli rice! You can actually buy riced cauliflower in the frozen section. It's good!

I love cauliflower rice! I eat it sautéed with diced bell peppers and onions. I also found this stuff called Right Rice… rice made out of vegetables. It’s really good with a bit of shredded Parmesan and black pepper. 😋

I wish I could buy the riced version, but unfortunately I am an american living in Belgium, and there are limited options. (I've found out dutch people are very traditional and don't stray from the norm like.. pre-riced cauliflower who would of thought!! (satire).. But yes.. If I want something special I normally have to make it from scratch living here.

Yes I’ve made it a few times although it’s no substitute for the real thing it’s still delicious and very low on the calories, I think I have a pic of it on my profile
