Fried Chicken Thigh, Drumstick & Low Carb Meat Loaf _ Water

Drank so much water before eating, the leftover Low Carb Meatloaf & the drumstick was enough, tried eating the thigh, couldn't, so ended up giving it away.

Sis...I've created my own version of low carb meatloaf...learned how to keep my Calories under 800 & my Carbs lower than 20 per day...so in learning this I used 2 thin slices of red Onions, 3 med Mushrooms, Jalapenos, Goat pepper, Sea Salt, 2 med Egg, grated Cheddar Cheese, unsalted Kerry Gold Butter and Groundbeef...Preheat the oven to 400°F (200°C). Over medium heat, melt the butter in a frying pan, add the onion and fry until soft, but not browned, and then set aside to cool. Mix the ground meat in a bowl, add in the fried onion and the few other ingredients, except the cheese. Mix well, but avoid overworking it because this can make the end result too dense. Form into a loaf and place into a greased baking dish. Bake in the middle of the oven for about 20 min, add Cheese at this point, allow to bake for another 15 minutes.... No flour, bread crumbs added

Slow Meta...Not allowed to use mayo in my diet, so no cole-slaw, Just felt like eating meat that day, therefore cutting out Carbs, hot sauce, the amount of Cayenne Pepper & Goat Pepper I use the sauce is not needed. Smiles, Thanks for commenting, God bless.

Sis, It won't be easy at 1st, but as the 3rd-day passes, with discipline, it gets easier, after a while you'll get so used to it, breakfast, snacking, lunch would not be an issue for you, well it was like that for me & if I can do it, so can you by the grace of God....Hallelujah!! The sauce was made with mayo and greek yogurt I just saw that you can't have mayonnaise but you could use the Greek yogurt with a little apple cider vinegar and then Parmesan cheese
