rockseer's Journal, 03 Jan 11

Good Morning and Happy New year!!! First business day of 2011 and off to a good start! I treated myself to a breakfast at Denny's of eggs and bacon and a good book! The weekend was great but I had the revelation of carb content of broccoli. I am devastated; really thought broccoli was going to be a saving food. SO, I am SEARCHING for a nice veggie, easy and convenient to use to get my carbs in. IF any of you reading my journal have a favorite EZ veggie suitable for induction, please share.

Also, over the weekend, hubby found my stash of Atkins goodies, and ate too many of them....NOTE: Eating alot of Atkins bars at one time could produce tummmy aches! He is fine, but now he will not be raiding the Atkins stash. Last night I shared ONE bar with him and he was so content. So much better than ice cream and popcorn that we used to eat in the evening.

Today I begin one of my challenges; the 100 push ups in 6 weeks. It is a nice way to get my fat arse in gear and the push ups can be regular or girlie (my faves) or even WALL Pushups! ANY pushups qualify. Again, hubby joining me in this. He is not overweight, but he is so very supportive and wants to help me.

OK, I should get my messages off voice mail and get to work!!! I hope everyone has an awesome day!!!!

Glad you had a great breakfast. I wouldn't swear off broccoli. It may be high in carbs but you need 15 veggie carbs a day and a high carb veggie is one way of doing that. I love rhubarb - its really high carb but I eat it like a dessert. There are lots of reasonable veggies out there and I am sure you will get in your stride soon. I love celery and peanut butter though you may not be at the peanut butter stage yet. I laughed to think of your husband pigging out on Atkins bars - sore tummy I am sure but lots of fibre so it will have passed so to speak!

Modest portion control and broccoli go hand in hand...but don't eliminate it! Just enjoy it as a side item. (hate to say it...but I am not a fan of those bars...cause too many stalls in too many people...) just think they are too 'manufactured'. Would rather just eat healthy whole foods and enjoy. Sorry your hubby had a tummy ache. Do you like celery w/ whipped cream cheese? You could do that (until you get to the adding peanut butter stage). Glad you are doing well. Love.

Are you allowed to have olives? Cream cheese with chopped olives blended in, on celery, is food of the gods. (Obviously I'm not on Atkins, or I would know these things. LOL.)

Sure you could chop in a couple olives. A little cream cheese goes a long way on a stalk of celery...and what a yummy treat! May just try the olives today!!

Sure, olives are great! Ten olivs give you 2 carbs, if I remember correctly. Definitely check out the atkins.com website - you can even print out all the foods (vegetables) allowable on Induction. Great resource!! I love having a chef salad with lots of veggies, hard-b eggs, cheese cubes, topped with baked chicken pieces. Yumm-O! I also recommend that you sautee' mushrooms and onions...and even green pepper. It goes great over chicken, steak, or in an omelete...or on top of your scrambled eggs. When I go out to eat, I always have the restaurant sautee a large serving of mushrooms to replace the serving of potatoe/bread/rice. I've never had any opposition from them - for which I am grateful. It is a delicious substitute and simple for most eating establishments to provide. SO excited for you that hubby is on board with you. My husband is the same - he is at a healthy weight, but he's my number one cheer leader and he is ALWAYS walking with me and eager to try my Atkins-friendly creations in the kitchen. So supportive! We are blessed with 2 great guys!!

Thanks for the heads up on Broccoli and the celery with cream cheese option. I am new to the menu planning part of Atkins and Your comments and ideas all really help. I personally love french cut green beans but they also have to be used in moderation.
