Doing some canning today for the first time ever!!! I am going to make some Zucchini-Pineapple, or Faux Pineapple. It sounded so good!! I have 2 huge zucchini that I'm going to use. I have the pint jars in the canner right now simmering to sterilize them. Re-washing the jars kicked my butt, so I'm going to sit here a little while before I start the zucchini. It really is an easy recipe. Just google zucchini-pineapple. I got the pineapple juice, the lemon juice , sugar and squash, so I'm ready!! I think it should make 7 pints plus some.

I'm doing pints, as I really don't think the hubs will like it. He doesn't like zucchini. I personally LOVE it!!
I ended up loosing all the plum tomatoes that my friend gave me. I really wanted to can some tomatoes too. I don't think I have enough pint jars to do that right now. I'll have to count them!! You can never have enough canning jars!!!

I think I'll have to go and get myself a bowl of cereal, to get me fueled up for this canning session!! Have a great day everyone!! Keep that diet battle raging!!! I'll be right here to back you up!!

Love zucchini - will be right over as long as you don't expect me to help can. I only did that ONCE with a bushel of cucumbers someone gave me ... $100 worth of jars & stuff later and I had a batch of pickles that were literally breath taking... that is.. they were soooo strong (because I'd always operated in the past that if a little is good, a whole lot is better so way too much vinegar or pickling spice or something) they took your breath away. The bean counter calculated those jars of pickles averaged about $25 each and I never did it again. Never had zucchini and pineapple - that sounds incredible!

Come on over Bella!! Those two big squash ended up making only 3 pints!! Oh well!! I have always loved zucchini, and adore fried green tomatoes!! I had some nice cucumbers, but just not enough to make pickles. What I canned was just zucchini that is cooked in pineapple juice. It smells and tastes like pineapple, but is zucchini!! A great way to get veggies into those kids that turn up their nose at veggies!!
