Baked some coconut scones with coconut flour, coconut milk, coconut oil and shaved unsweetened coconut - of course eggs and flaxseed too. They were really good; made them with Xylitol so they came out at just under 3 carbs each for a nice substantial breakfast scone.
So, for those of you who really need something for breakfast other than eggs, check out the many recipes popping up online with coconut products. They have lots of fiber too.
Just hoping I am not missing some really negative side effect; so far, so good!
