I haven't tried this - how was it? I have subbed cauli in potato-salad and that was good.

It was very good ☺️ Recipe calls for boiling the cauliflower and draining it. For the sauce, 4oz cream cheese, 1/3 cup heavy cream, 1 tsp salt, 1/4 tsp cayenne pepper, and 1/4 tsp paprika. Mix it with the cauliflower then add 2 cups of cheddar cheese (I subbed it for monterey jack). It called for bacon too but left that out. If you want to try it 😊
