Today was Field Day at my son's school and I was up there doing much walking. I wore my pedometer and tracked 12,814 steps today!!!! That was a trip to Walmart included in there too!
Tomorrow I will try to remember to wear it again for the field trip to the museum in Pittsburgh.
I am including the recipe for fruit salsa that a couple of you asked for. I am making it tonight for my son finally!
Here it is:
Fruit Salsa
2 med. granny smith apples, peeled and chopped 1 pint strawberries, diced 2 kiwi, peeled and diced 1 small orange 2 T. packed brown sugar 2 T.apple jelly
Mix apples, strawberries and kiwis. Zest orange and then juice the orange into the apple and berry mixture. Add zest, juice, brown sugar and jelly to fruit mixture; mix gently. Refriderate until ready to serve. Serve with baked cinnamon chips.
Baked Cinnamon Chips 8 7 inch flour tortillas
Preheat oven to 400 degrees. Cut each tortilla into eight wedges; arrange half of the tortilla wedges in a single layer on large baking sheet. Bake 8-10 minutes or until edges are lightly browned. Remove from baking pan and repeat with remaining tortilla chips.
3 Tablespoons of Salsa and 4 tortilla chips is 1 point.
This is such a yummy snack!!! My kids love it!!
