Holy cow!!! I'm already over on my total carbs and net carbs. But it is my birthday. The girls at work fixed me a birthday lunch and were so sweet to make sure it was everything that I could have. I even asked them to not bring any desserts. They fixed italian beef (have to get you guys that recipe. It is very low carb), green beans, and a veggie tray. But then I decided that since it is my birthday that I deserved some sort of treat and I have alot going on this weekend that will expose me to temptations. So I made a sugar free/crustless cheesecake and flourless chocolate cake that I found on this site under recipes. The cheesecake is pretty good. The flourless chocolate cake has potential but it is a little bitter. I think if I make it again I am going to cut out the cocoa and add more splenda. But I put a piece of the choc. cake on the bottom and a slice of the cheese cake on top with a little dab of homeade whipped heavy cream. It was pretty yummy. I was thinking that it would be neat to see if I could actually make it that way, with the cake being the crust. Of course even though they are fairly low carb, when you eat them both then it is alot of carbs. I still have my birthday supper to go tonight. I think my lunch dessert was enough to fulfil my sweet tooth so I'll just have to think protien mostly tonight. I figure even if I am over my carb limit it is still better than totally pigging out on birthday cake or any of the other multiple foods I could choose from. I have a busy weekend. Tonight I will be with family. It is also my great neice's birthday so we are going to her party. Tommorrow I have to work during the day and then in the evening me, my sisters, and our daughters are having a wedding shower/bachelorette party for my neice who is getting married in July. I was asked to make the cakes for that. My sister wanted me to make 2 cakes, one for the shower portion of the night and one for the bachelorette. That is another reason I made the low carb desserts. I am going to take them to both events just in case I feel the urge. I was up until 2:00 am baking and decorating this morning and had to be at work at 8:00. I went to Zumba last night, came home and mowed grass, came in and fixed supper, baked a bachelorette cake (it is cute. It looks like a male stripper. He is wearing a little bikini and a bow tie. LOL), 3 doz. cookies iced and decorated (I decided on cookies instead of two cakes), the cheesecake, and flourless chocolate cake. Then had to clean the kitchen from the mess. Whew!!! It is a good thing Atkins is giving me so much energy. I did really well with all the baking except that I have a bad habit of when I am decorating cakes that I lick my fingers and the beaters alot. I caught myself several times but finally just made myself fully aware of it and made sure I just washed my hands before licking! I hope the few licks I did take don't mess me up too much. I know this isn't going to be the perfect low carb weekend but it is going to be a much lower carb weekend then it would have been prior to me starting Atkins. And I am pretty proud of myself that I can say no to the cakes and cookies even on my birthday and make my own version that is better for me. And my coworkers gave me a gift card for my birthday so that I can go buy some new clothes because mine are getting so baggy. How cool is that?

Happy Birthday, a day late, Nino. So nice to have such great friends! and enjoy shopping with that gift card. It is going to be a blast, trying on all those new, SMALLER clothes!! lol Have fun this weekend!
